Why pistachio is having its main-character moment

Once a quiet supporting player in the ice cream aisle, pistachio has officially stepped into the spotlight.

From Dubai chocolate and pistachio lattes to gelato, pastries and spreads, the distinctive green nut is everywhere.

From Dubai chocolate to global obsession

The pistachio boom owes much to the viral Dubai chocolate bar, which pairs creamy pistachio filling with crunchy kataifi pastry and chocolate. As reported by BBC Food, its social media appeal helped turn pistachio from a familiar flavour into a luxury-coded food trend.

In South Africa, the effect has been noticeable. Local food trend reporting shows strong interest in pistachio, with the flavour moving beyond one viral product and into cakes, lattes, ice cream and other menu staples.

That shift matters. Unlike a novelty food that disappears once the internet moves on, pistachio has proved remarkably adaptable.

Why we can’t get enough

According to Bakels Group, part of pistachio’s appeal is its balance of flavour and texture. It has a naturally rich, slightly sweet and earthy taste that works equally well in desserts and drinks. Its pale green colour also makes it instantly recognisable – and highly photogenic.

There is another reason for its staying power: pistachio feels indulgent without being overwhelmingly sweet.

Chefs and bakers are using it in everything from croissants and cheesecakes to chocolate bars and gelato, while coffee shops are experimenting with pistachio-flavoured drinks.

More than just a trend

The question now is whether pistachio can outlast its viral moment. Signs point to yes. Industry data shows growing interest in pistachio beyond the original Dubai chocolate format, while South African food-trend coverage suggests consumers are becoming more selective about which viral flavours deserve staying power.

So, whether you prefer yours in a scoop of gelato, folded into a pastry or hidden inside a glossy chocolate bar, one thing is clear: pistachio isn’t just having a moment. It may have earned a permanent place on the menu.
