3 bean soup

3 bean soup

Beans are an excellent source of nutrients, especially protein and iron, and you can enjoy the goodness in a hearty 3 bean soup by Ntwenhle Gcabashe.

Prep time: 5 minutes

Cooking time: 35 minutes

Serve 4-5

  • 1 cup canned chickpeas, drained
  • 1 cup canned butter beans, drained
  • 1 cup canned red kidney beans, drained
  • 1 onion, finely chopped
  • 1 cup ham, finely chopped
  • 3 garlic cloves, crushed
  • 1 thumb-size fresh ginger, grated
  • Handful fresh coriander, chopped
  • 2 medium carrots, chopped
  • 10 cups (2.5L) vegetable stock
  • Fresh parsley, for serving
  • Doritos chips, for serving

  1. In a large saucepan, add beans, onion, ham, garlic, ginger, coriander, carrots and stock. Cover with a lid and cook for 30-35 minutes or until reduced in size.
  2. Serve with parsley and Doritos chips
