- 6 cups butternut, cut into thick cubes
- ½ cup (125ml) oil
- 3 tablespoons ground cinnamon
- 4 tablespoon (60ml) honey
- 3 sprigs fresh thyme
- Salt and pepper to taste
- Preheat the oven to 180?C.
- In a roasting tray, mix the butternut, oil, cinnamon, honey, thyme and seasonings.
- Roast for 45 minutes or until soft and sticky.
- Serve immediately.
