From garden to table: Making the most of your spring harvest

Spring is a season of renewal, and nowhere is that more apparent than at the market or in the garden. After months of hearty winter meals, spring brings a welcome abundance of crisp vegetables, tender greens, fragrant herbs, and colourful fruits.

Making the most of this seasonal harvest is all about keeping things fresh, simple, and full of flavour.

Whether you grow your own produce, visit a farmers’ market, or simply want to cook more seasonally, spring ingredients offer endless possibilities.

Make the most of leafy greens

Spring is the time for your tender greens to grow, such as spinach, lettuce, Swiss chard, and young kale. Instead of treating greens as an afterthought, make them the star of your meals. Spring brings cooler, warmer weather and creating a large spring salad combined with your own produce can be particularly pleasing.

For something more substantial, use seasonal greens in your savoury tarts, frittatas, or quiches.

Add your fresh herbs to everything

One of the easiest ways to make spring produce taste exceptional is with fresh herbs. Parsley, mint, coriander, chives, basil, and dill can transform even the simplest dish.

Make a vibrant herb sauce to serve with roasted vegetables or grilled fish. Add chopped herbs to salads, potato dishes, soups, and scrambled eggs. You can also blend leftover herbs with olive oil, garlic, nuts, and cheese to create a homemade pesto.

If you have more herbs than you can use immediately, chop and freeze them in ice cube trays with olive oil. They can then be added directly to future dishes.

Use your spring fruit

Depending on where you live, spring may bring fresh fruits, such as strawberries, cherries, apricots, or other early-season fruits. These are perfect for simple desserts that highlight their natural sweetness.

You can use strawberries that can be served with yoghurt and honey, folded into a fruit salad, or spooned over pancakes. Sometimes rhubarb makes a delicious crumble, or tart, especially when paired with strawberries or citrus.

Preserve what you can’t eat

A good, successful harvest can sometimes produce more food than you can enjoy. Rather than letting surplus vegetables and herbs go to waste, preserve them for later.

You can freeze beans, spinach, and some herbs. Turn excess tomatoes into sauces or chutneys, creating something you and your family can enjoy. Fruit can be transformed into jams, sauces, or frozen for smoothies and desserts.

Preserving your spring harvest extends the season and allows you to enjoy its flavours long after the garden or market has moved on.
