Traditional tripe and potato stew recipe

Serves: 4-6
  • 1kg tripe (beef or mutton), washed and cut into pieces
  • water (enough to cover the tripe during cooking)
  • 4 potatoes, peeled and quartered
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 2 tablespoons curry powder
  • salt and cayenne pepper to taste
  • 1pkt Knorr Brown Onion Soup
  1. Cover tripe with water, bring to the boil and simmer for three hours.
  2. Add potatoes, onion, garlic, curry powder, salt and cayenne pepper to taste.
  3. Mix Knorr Brown Onion Soup with a bit of water to form a paste. Add to tripe stew and stir in well.
  4. Add more water if the stew is dry. Simmer for a further 30 minutes until the potatoes are cooked through.
  5. Serve hot over pap or samp.
