Tender Lamb Shanks

4 lamb shanks
3 tablespoons (45ml) oil
1 onion, finely chopped
2 garlic cloves, crushed
1 tablespoon fresh ginger, finely chopped
2 large tomatoes, chopped2 tablespoons tomato puree
2 sprigs fresh rosemary
1 tablespoon Rajah Hot Curry Powder
4 sprigs fresh thyme
1 cup (250ml) red wine
4 cups (1ℓ) beef stock
2 bay leaves
2 large carrots, chopped
2 cups lentils
1. In a large saucepan, fry lamb shanks until browned. Remove from pan.
2. Add onion, Rajah Hot Curry Powder, garlic and ginger. Fry until fragrant.
3. Add lamb shanks and remaining ingredients, except lentils. Cover with a lid and cook for 2 hours.
4. Add lentils and cook for 30 minutes or until cooked through.
