Spinach and bacon gratin

Whip up something light and delicious with this spinach and bacon gratin

Serves: 2–3

  • 3 cups spinach, finely chopped
  • 2 cups bacon, chopped
  • 1 tablespoon butter
  • 1 red onion, chopped
  • 1 garlic clove, crushed
  • Handful fresh thyme, chopped
  • Salt and pepper
  • 1 cup (250ml) cream
  • 2 eggs
  • 1 cup Cheddar cheese, grated
  • ½ cup Feta cheese, chopped
  • Basil leaves, for serving
  1. Preheat oven to 180˚C.
  2. Heat butter, bacon, onion and garlic until soft.
  3. Add spinach and thyme. Cook until the spinach is wilted. Season with salt and pepper. Transfer into oven dish.
  4. In a jug mix cream and egg. Pour over spinach mixture and sprinkle with cheeses.
  5. Bake for 25–30 minutes or until golden.
  6. Serve with basil leaves.
