SEALED HAKE WITH OLIVES

Ingredients
  • 8 thick hake steaks
  • 4 tablespoons (60ml) margarine, melted
  • 2 cups black olives
  • 2 cups cucumber, thinly cubed
  • ½ cup (125ml) oil
  • 3 tablespoons (45ml) vinegar
  • 2 tablespoons sugar
  • Salt and pepper to taste
Instructions
  1. Heat the pan. Meantime, brush the hake steaks with melted margarine.
  2. Season well with salt and pepper.
  3. Lightly fry for 5-7 minutes on each side.
  4. In a bowl, mix the olives, cucumber and drizzle with oil, vinegar and sugar.
  5. Season well with salt and pepper.
  6. Serve the fish with olive salsa.
  7. Serve with rice or mashed potatoes.
