ROASTED PEACHES AND ICE CREAM
- 6-8 peaches, halved and pips removed
- 1 cup pistachio nuts, chopped
- 1 cup coconut flakes
- 4 tablespoons castor sugar
- ½ cup butter.
- Preheat the oven to 180?C.
- In a bowl, mix the nuts, coconut, sugar and butter.
- Spoon this mixture into peach halves and roast for 20-25 minutes.
- Serve warm with ice cream.
