  • 2kg ham
  • 1 star seed
  • 3 bay leaves
  • 1 thumb size ginger, sliced
  • 1 cup soya sauce
  • 4 tablespoons brown sugar
  • 4 cups (1ℓ) orange juice
  • 2 tablespoons orange zest
  • ½ cup (125mℓ) oil
  1. Preheat oven to 180˚C.
  2. In a saucepan, heat star seed, bay leaves, ginger, soya sauce, sugar, orange juice and zest until mixture thickens. Let it set for 8–10 minutes or until fragrant. Then add oil. Mix well.
  3. Place ham on roasting tray. Brush over the ham with glazing.
  4. Roast for 2 hours or until cooked through, making sure to glaze every 15 minutes.
  5. Let it rest for 10–15 minutes before serving.
