- A handful of fresh coriander, chopped
- 1 cup spicy sausage meat
- 1 garlic clove, minced
- 1 cup dried apricots, chopped
- Salt and pepper to taste
- 1 large chicken, cleaned
- ½ cup butter
- Roast potatoes to serve
- Preheat oven to 180˚C.
- In a bowl, combine coriander, sausage, garlic and apricots. Season well.
- Stuff into chicken and secure with a kitchen string. Place stuffed chicken onto roasting tray. Rub chicken with butter. Roast until juices run clear.
- Serve with roast potatoes.
