  • A handful of fresh coriander, chopped
  • 1 cup spicy sausage meat
  • 1 garlic clove, minced
  • 1 cup dried apricots, chopped
  • Salt and pepper to taste
  • 1 large chicken, cleaned
  • ½ cup butter
  • Roast potatoes to serve
  1. Preheat oven to 180˚C.
  2. In a bowl, combine coriander, sausage, garlic and apricots. Season well.
  3. Stuff into chicken and secure with a kitchen string. Place stuffed chicken onto roasting tray. Rub chicken with butter. Roast until juices run clear.
  4. Serve with roast potatoes.
