Make this indulgent warm and rich chocolate pudding by Ntwenhle Gcabashe

Serves: 8–10

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ½ cup cocoa powder
  • Pinch of salt
  • ½ cup castor sugar
  • 4 eggs
  • 1 egg yolk
  • 1 cup (250ml) milk
  • ½ cup (125ml) strong coffee
  • 1 cup (250ml) oil
  • Pomegranate seeds, for serving

Chocolate sauce

  • ½ cup castor sugar
  • ½ cup cocoa
  • 1 cup chocolate chip
  • 1½ cups (375ml) cream
  • 2 tablespoons margarine

  1. Preheat the oven to 180˚C.
  2. Sift flour, baking powder, cocoa powder, salt and sugar.
  3. Whisk eggs, yolk, milk, coffee and oil. Pour over dry ingredients and mix well; do not over-stir. Spoon dough into lightly greased muffin tin, and bake for 20–25 minutes or until cooked through.
  4. Meanwhile, heat chocolate sauce ingredients in a saucepan. Cook until slightly thickened. Pour over warm cake and serve with pomegranate seeds.
