Minestrone Soup

Preparation time: Cooking time: 30 minutes  Serves: 6

Ingredients

  • 2 carrots peeled, chopped
  • 1 onion, peeled and diced
  • 2 celery sticks, chopped
  • 1 teaspoon masala
  • 1 medium potato, peeled chopped
  • 2 garlic cloves, crushed
  • 400g chopped tomato
  • 4 cups beef stock
  • 400g red kidney beans, rinsed and drained
  • 80g elbow pasta
  • salt and freshly ground pasta
  • 2 tablespoon chopped fresh parsley

Method 

  1. In a medium pot, heat oil then fry onions and celery until golden
  2. Add garlic and masala and stir
  3. Add potatoes and tomatoes and stir
  4. Add the broth and pasta stir and cook at low heat for about 20 minutes, until potatoes and pasta are cooked through
  5. Add salt and pepper then add beans, stir and cook at low heat covered for a further 10 minutes
  6. Serve immediately.
