Marinated lamb and couscous

  • 2kg trimmed lamb chops
  • 2 garlic cloves, crushed
  • 1 tablespoons ground cumin
  • 1 tablespoon paprika
  • ½ cup (125ml) oil
  • 4 tablespoons honey
  • 2 tablespoons molasses
  • ½ cup (125ml) orange juice
  • 2 cups cherry tomatoes
  • Handful fresh coriander, chopped
  • Moroccan couscous, for serving
  • Micro herbs, for serving
  1. In a bowl, mix garlic and the rest of the ingredients.
  2. Pour marinade over the lamb, and let it sit for 2­­–3 hours.
  3. Heat griddle pan and grill meat for 4–5 minutes on each side.
  4. Serve with Moroccan couscous and micro herbs.
