Leftover Cabbage and Potato Cakes

  • 2 cups cabbage, chopped and cooked
  • 2 cups potato, cooked and mashed
  • 4 tablespoons (60ml) oil
  • 1 cup bacon, cooked
  • 1 cup cake flour, sifted
  • 3 tablespoons fresh chives, chopped
  • 1 garlic clove, finely crushed
  • 1 egg, beaten
  • 3 tablespoons (45ml) water
  • Salt and pepper
  • Micro leaves, for serving
  • Spicy mayonnaise, for serving
  1. Heat oil in a large frying pan.
  2. In a bowl, mix cabbage, potato, bacon, flour, chives, garlic, egg and water. Don’t make the batter too thin.
  3. Season with salt and pepper.
  4. Spoon into frying pan and flatten with back of the spoon.
  5. Fry for 4–5 minutes or until golden.
  6. Serve with micro leaves and mayonnaise.
