Lamb Chops In Red Wine Marinade
- 3kg rack of lamb chops
- ½ cup tomato paste
- ½ cup (125mℓ) red wine
- ½ cup brown sugar
- 4 tablespoons fresh oregano, finely chopped
- 4 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- Preheat oven to 180˚C.
- In a bowl combine tomato paste, wine, sugar, herbs and seasonings.
- Brush all over meat, place on oven tray and grill for 40–45 minutes.
- Let it rest for 10–15 minutes before serving.
