Ingredients
  • 3kg rack of lamb chops
  • ½ cup tomato paste
  • ½ cup (125mℓ) red wine
  • ½ cup brown sugar
  • 4 tablespoons fresh oregano, finely chopped
  • 4 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 180˚C.
  2. In a bowl combine tomato paste, wine, sugar, herbs and seasonings.
  3. Brush all over meat, place on oven tray and grill for 40–45 minutes.
  4. Let it rest for 10–15 minutes before serving.
