How to make a spicy tomato gravy with eggs



Tomato with eggs

Prep time:  10minutes

Cooking time: 20 minutes

Serve: 2

3 large tomatoes, blanched and skin removed

2 tablespoon (30ml) oil

1 onion, grated

1 garlic clove, minced

1 tablespoon tomato paste

1 cup tomato passata

1 whole chilli, chopped

1 cup (250ml) water

Handful fresh coriander, chopped

4 eggs

Salt & pepper to taste

  1. Heat oil in frying pan.
  2. Fry onions and garlic until soft.
  3. Add tomatoes, pasta, passata and water. Let it simmer for 10-15 minute or until thicken. Season well.
  4. With a back of the spoon, make 4 dips in the sauce. Then crack an egg into each one. Put a lid on the pan, and then cook over a low heat until the eggs are cooked.
  5. Serve with bread.
