Creamy Pea and Potato Soup

Prep time: 15 minutes Cooking time: 30 minutes Serves: 3–4

  • 2 cups frozen peas
  • 2 medium potatoes, cubed
  • 2 tablespoons butter
  • 1 spring onion, chopped
  • 4 cups (1ℓ) vegetable stock
  • 1 cup (250ml) cream
  • Salt and pepper
  • Pumpkin seeds, for serving
  • Crispy chopped bacon, for serving
  1. In a large saucepan, heat butter and fry onion until soft.
  2. Add peas, potatoes and stock. Cook for 25–30 minutes or until soft.
  3. Add cream, and blend until smooth. Season with salt and pepper.
  4. Serve with bacon.
