Chocolate lamington

The chocolate lamington was named after Charles Wallace Baillie, Lord Lamington, who was the governor of Queensland, Australia, from 1895. Lord Lamington was known for wearing a homburg hat that resembled the cake.

  • 1½ cups cake flour
  • ½ cup cocoa powder
  • 2½ teaspoons baking powder
  • Pinch salt
  • ½ cup brown sugar
  • 1 cup (250ml) oil
  • 4 eggs
  • Chocolate sauce, for coating
  • Coconut, for dusting
  • Fresh cherries, for serving
  1. Preheat the oven to 180˚C.
  2. Sift cocoa, flour, baking powder and salt in a large bowl. Add sugar and mix.
  3. Whisk oil and eggs in a jug. Pour over dry ingredients, and mix well. Spoon into a lightly greased baking tin and bake for 45–50 minutes. Set aside to cool.
  4. Cut cake into small squares. Dip into chocolate sauce and dust with coconut. Serve with cherries.
