1. Brinjal Fries                                 

Prep time: 15 minutes

Cooking time: 8–10 minutes

Serves: 4

  • 1 cup (250ml) oil
  • ½ cup self-raising flour, sifted
  • ½ cup Parmesan cheese, grated
  • 1 cup (250ml) soda water
  • 1 egg, beaten
  • Salt and pepper
  • 4 large brinjals, sliced thickly
  • Spicy mayonnaise, for serving
  1. In a frying pan, heat oil.
  2. Meanwhile, in a bowl, mix flour, cheese, soda water and egg. Season with salt and pepper.
  3. Deep brinjal into this batter. Carefully place into hot oil and fry for 8–10 minutes or until golden.
  4. Serve with spicy mayonnaise.

 2. Brinjal and bean curry

Prep time: 10 minutes

Cooking time: 20–25 minutes

Serves: 3

  • 3 tablespoons (45ml) oil
  • 1 garlic clove, crushed
  • 1 large onion, chopped
  • 3 tablespoons (45ml) curry paste
  • 2 large brinjals, cubed
  • 1 cup butter beans, cooked
  • 1 cup chickpeas, cooked
  • 2 large tomatoes, chopped
  • 2 cups (500ml) water
  • Salt and pepper
  • Handful coriander, chopped
  • Rice, cooked, for serving
  • Yoghurt, lime wedges and pomegranate, for serving
  • Chopped spring onion, for serving
  • Avocado salad, for serving
  1. In a large frying pan, heat oil and fry garlic and onion until soft.
  2. Add paste, brinjals, beans, chickpeas, tomatoes and water. Season with salt and pepper. Cover with lid and simmer until cooked through.
  3. Add coriander and serve with rice, yoghurt, lime, pomegranate, spring onion and avocado salad.

3. Brinjal and bacon quiche 

Prep time: 15 minutes

Cooking time: 45 minutes

Serves: 4–5

  • 2 cups brinjal, sliced and cooked
  • 2 cups bacon, chopped and grilled
  • 1 spring onion, chopped
  • Pinch cayenne pepper
  • Salt and pepper
  • 2 cups (500ml) cream
  • 3 eggs, beaten
  • 1 cup cheddar cheese, grated
  • Crumbled feta cheese, for serving
  1. Preheat the oven to 180˚C.
  2. In a large bowl, mix brinjal, bacon, onion and cayenne pepper. Season with salt and pepper.
  3. Place in an oven dish.
  4. Meanwhile, whisk cream, eggs and cheese together in a jug. Pour over brinjal mixture and bake for 40–45 minutes.
  5. Serve immediately with feta cheese.
