Beef Japanese Curry

  • 2 cups beef, cubed
  • 2 tablespoons (30ml) oil
  • 1 onion, chopped
  • 1 butternut, peeled and cubed
  • 2 carrots, peeled and chopped
  • 1 green apple, chopped
  • 1 tablespoon curry powder
  • 1 cup tomato puree
  • 1 tablespoon tomato paste
  • 2 cups (500ml) beef stock
  • Salt and pepper
  • Yoghurt, for serving
  • Cinnamon rice, for serving
  1. In a large frying pan, heat oil. Add beef and fry for 12–15 minutes or until browned.
  2. Add onion, butternut, carrots, apple, curry powder, tomato puree and paste. Add stock and cover with a lid. Cook for 40–45 minutes or until vegetables are soft.
  3. Season with salt and pepper.
  4. Sprinkle yoghurt on top and serve with rice.
