Two hearty soup recipes to help you beat the cold.

The cold months are upon us and what better way is there too keep the cold away than a bowl of a hearty soup. We can’t think of any either! Warm yourself up with these flavourful soups. By Ntwenhle Gcabashe. Photography by Dylan Swart

1. Creamy Pea and Potato Soup

Prep time: 15 minutes

Cooking time: 30 minutes

Serves: 3–4

  • 2 cups frozen peas
  • 2 medium potatoes, cubed
  • 2 tablespoons butter
  • 1 spring onion, chopped
  • 4 cups (1ℓ) vegetable stock
  • 1 cup (250ml) cream
  • Salt and pepper
  • Pumpkin seeds, for serving
  • Crispy chopped bacon, for serving
  1. In a large saucepan, heat butter and fry onion until soft.
  2. Add peas, potatoes and stock. Cook for 25–30 minutes or until soft.
  3. Add cream, and blend until smooth. Season with salt and pepper.
  4. Serve with bacon.

2. 3-Bean Soup

Prep time: 15 minutes

Cooking time: 25–30 minutes

Serves: 2–3

  • 1 cup kidney beans, cooked
  • 1 cup red beans, cooked
  • 1 cup chick peas, cooked
  • 1 tablespoon (15ml) oil
  • 1 cup bacon, chopped
  • 1 large carrot, chopped
  • 4 cups (1ℓ) vegetable stock
  • Nachos, for serving
  1. Heat oil in a large saucepan. Fry bacon until soft.
  2. Add beans, carrots and stock. Cook until soft.
  3. Serve with nachos.
