1. Pilchards and Butternut Pasta 

Prep time: 15 minutes

Cooking time: 20 minutes

Serves: 3–4

  • 1 can pilchards
  • 2 cups butternut, cubed and cooked
  • 3 cups spaghetti, cooked
  • 2 tablespoons (30ml) oil
  • 2 garlic cloves, crushed
  • 1 tablespoon curry powder
  • 1 cup (250ml) tomato passata
  • 1 cup Parmesan cheese, grated
  • Fresh basil leaves, for serving
  1. Heat oil in a frying pan. Fry garlic or until soft.
  2. Add curry powder, tomato passata, pilchards, butternut and spaghetti. Gently stir until covered with sauce.
  3. Top with grated cheese and basil leaves. Serve immediately.

2. Creamy Chicken, Spinach and Pasta

Prep time: 15 minutes

Cooking time: 15 minutes

Serves: 3–4

  • 3 chicken breasts, cooked and chopped
  • 2 handfuls spinach, finely chopped and cooked
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • Salt and pepper
  • 3 cups (750ml) cream
  • 3 cups penne pasta, cooked
  • 1 cup feta cheese, crumbled
  • 1 cup cheddar cheese, grated
  • Handful fresh thyme, chopped
  1. Heat butter in a frying pan. Fry onion and garlic for 3–5 minutes or until soft.
  2. Add chicken and spinach, and stir. Season with salt and pepper.
  3. Add cream, pasta and cheeses. Cook for 8–10 minutes or until the cheeses have melted.
  4. Sprinkle with thyme, and serve.

3. Sausages and Beans Salad

Prep time: 15 minutes

Cooking time: 15 minutes

Serves: 3–4

  • 12 sausages
  • 1 can baked beans
  • 1 can butter beans
  • 2 tablespoons (30ml) oil
  • 1 teaspoon fresh ginger, chopped
  • 2 garlic cloves, crushed
  • 3 large tomatoes, chopped
  • 2 tablespoons tomato paste
  • Handful fresh parsley, chopped
  • 4 cups pasta, cooked
  • Salt and pepper
  • Coriander, for serving
  1. In a bowl, squeeze the sausage meat from the skin. Roll into small balls.
  2. Heat oil in a frying pan. Fry meatballs for 8–10 minutes or until cooked.
  3. Add ginger and garlic. Fry for 3–5 minutes or until soft. Add beans, tomatoes, paste, parsley and pasta. Mix well. Season with salt and pepper.
  4. Serve with coriander.
